| Method |
In a large bowl, toss together black beans, corn, chicken, cilantro and red
pepper and set aside.
In other small bowl, stir together yogurt and chipotle mayonnaise and stir
this sauce into chicken mixture until well combined. Chill, covered for 1
hour to allow the flavors to develop.
For chipotle mayonnaise-
Ingredients-
Chipotle chili in adobo sauce - 1 can
Adobo sauce - 1/2 teaspoon
Worcestershire sauce - 2 teaspoons
Mayonnaise - 1 cup
Method- Mince chipotle chili to a paste with 1/2 teaspoon of adobo sauce. In a bowl
stir all the ingredients together until combined well.
