| Method |
Preheat the oven to 400 degree f. Put the apples and apple juice in a large
skillet, bring to a boil, reduce the heat and simmer until just tender, about 5
minutes. Add pie filling and cinnamon, simmer for few minutes and then take
off the heat.
Combine the baking mix and 2 tablespoons sugar in one bowl and beat the oil
, eggs and milk in another bowl. Add to the baking mix and stir the batter
until blended. Pour the hot apple mixture into a 2-quart shallow baking dish.
Drop 8 spoonfuls of the batter over the apple mixture. Sprinkle with the
remaining 1 tablespoon of sugar. Place the baking dish on a baking sheet to
catch any overflow. Bake until the fruit is bubbling and the top is browned,
about 25 minutes. Cook slightly on a rack. Serve warm.
